Profile America — Monday, July 30th. Walking down the cereal aisle in a supermarket, you'll see dozens of brands on display. One of them has been available for over 100 years. This week in 1893, a Denver restaurant owner, Henry Perky, patented a machine for making shredded wheat. By 1901, he had set up an ultra-modern plant at Niagara Falls to make shredded wheat, called "The Palace of Light," and the falls became the familiar logo of the product. Shredded wheat and other cereals are part of the nearly 135 pounds of wheat products each of us eat every year. To satisfy this hunger, some 48 million acres of wheat worth nearly $13 billion are harvested annually by the nation's farmers.
