WINSTON-SALEM, N.C., Dec. 8, 2014 /PRNewswire/ -- Turkey and spiral cut ham. Every year, it's the same thing. Spend the day roasting a turkey on Thanksgiving. There's a week or more of turkey leftovers, until you hit the point that you hate turkey. Then Christmas comes along, when you toss a spiral ham in the oven to heat it up, and you live off of ham for the next week.
Don't get us wrong. We, at Joyce Farms, love turkey. So much so, that we grow traditional heritage blacks to sell for the holiday season. But wouldn't you like to get out of the rut? Whether you're a professional chef looking for something for your restaurant's carving board this season, or you're an amateur chef tired of the same old holiday fare, we have the bird for you.
The Poulet Rouge Capon from our French Label Rouge product line.
"Our capons are smaller than a turkey, averaging 8-10 pounds each if you buy the whole bird," said Ron Joyce, president and CEO of Joyce Farms. "The size makes them perfect for a small family gathering; their taste is a great change during the holidays."
Joyce Farms has two capon product offerings, the whole capon and the Capon Roulade, which averages about five pounds. The whole bird is shipped with the head and feet attached. The roulade comes deboned, rolled, netted and ready to stuff. "Our capons come from old world French lineage, not a commercial breed," said Joyce. "Their breeding lines as well as their growing conditions create a tender yet distinctive, flavorful meat. Our chickens taste like chicken used to taste...like chicken."
Like the rest of the Joyce Farms heritage line, the capons are raised on small family-owned farms in a free range environment, allowed to go outside when they want.
There are no added hormones, steroids or antibiotics used in their growing process. "We believe in growing our birds at Mother Nature's pace, without the use of hormones, steroids and antibiotics. Messing with that process messes with everything from the true shape of the bird to the taste when you serve it. We raise happy chickens, give them a longer growing season, feed them a vegetarian diet without any animal bi-products, and leave them alone to be chickens."
We believe the product speaks for itself. Whether you're holiday celebration requires one roulade for a close family gathering, or several whole roasted birds for a big celebration, Joyce Farms capons are a unique choice for the holiday season that will have your guests talking for years to come. All Joyce Farms products are available online at joyce-farms.com.
