Joyce Farms has two capon product offerings, the whole capon and the Capon Roulade, which averages about five pounds. The whole bird is shipped with the head and feet attached. The roulade comes deboned, rolled, netted and ready to stuff. "Our capons come from old world French lineage, not a commercial breed," said Joyce. "Their breeding lines as well as their growing conditions create a tender yet distinctive, flavorful meat. Our chickens taste like chicken used to taste...like chicken."
