A classic Buffalo-style sauce is prepared with two simple ingredients, cayenne pepper hot sauce and butter. But the best wing sauces are more extravagant variations – like the nine unique variations served at Buffalo Wings & Rings. To prepare the classic version, lightly heat cayenne pepper sauce (Durkee's or Frank's) and remove from heat. Swirl in room temperature butter and set aside. This formula has some simple variations that add zest to your wings, such as adding chopped fresh rosemary, minced garlic, crushed red pepper flakes and a squeeze of fresh lemon juice. There are many different ways for the home chef to prepare delicious Buffalo-style chicken wings, but grilling is one of the best methods because of the potential for high heat. All that's required to prepare backyard Buffalo wings is two large bowls, two pairs of tongs, a hot grill, and some simple ingredients. To prepare for grilling, heat the grill to high and toss the wings with a few tablespoons of olive oil in a large bowl. Season with salt, black pepper and cayenne pepper. Place the wings on the grill in a single layer without crowding them together.
Buffalo Wings & Rings suggests applying a layer of foil to the grill to protect your chicken. Be sure the chicken is not placed on the rack directly above the heat source, but rather on the middle or top rack. You'll know it's done when the chicken is firm, and golden brown on both sides – about four to five minutes per side.
