Sartori's Extra-Aged Asiago was noted for its very creamy and consistent flavor profile from beginning to end. The extra-aging of 12 months enhances the aroma and nutty flavors of the cheese. With a score of 99.2 out of 100, Sartori's Extra-Aged Asiago was named 'Best Asiago' in the country.
For 120 years, the Wisconsin Cheese Makers Association has been educating and informing their members on the dairy industry. The very first biennial cheese contest was held in 1891 and since then, the competition has grown tremendously, gaining national attention with states all across the US including California, Ohio and Vermont. This year, the contest housed over 1700 entries throughout 82 classes, from a total of 30 states.
"Each year, this competition continues to grow, and we see new entries – which makes it more challenging. We compete with the best, for the best. It's such an honor to take home two 'Best of Class' awards," states Chad Vincent, Sartori Chief Marketing Officer. "After every competition, we take time to evaluate our cheese. We look at the judges' comments and see where we can improve. It's truly a team effort. The U.S. Championship is incredibly competitive, and receiving seven awards here means a lot to our team members."
