Salute, A Southern Italian Restaurant, Set To Open In Red Rock Resort

LAS VEGAS, June 1, 2015 /PRNewswire/ --Buon cibo, buon vino, buoni amici. English translation: Good food, good wine, good friends.

Welcome to Salute, an authentic Italian-inspired restaurant set to open this Fall in Las Vegas' Red Rock Resort.

Helmed by acclaimed international chef Luciano Sautto, Salute (which literally means "to health" in Italian) will feature dishes passed down from generation to generation in the Sautto family, as well as other signature southern Italian dishes. The emphasis, as is the chef's forte, will be on freshness.

A native of Naples, Italy, Sautto got his start working out of his family's pizza restaurant and he became a third-generation pizzaiolo. Having caught the cooking bug, he later attended culinary school and cooked in kitchens throughout Europe, as well as in Miami and Beverly Hills.

Sautto brings a youthful, yet seasoned and steady hand to Salute. The decor, however, will be as beautiful and detail-oriented as the food. Upon entering, guests will walk through a main entrance made of imported Italian marble which will lead to a warm, inviting dining room.

An all-encompassing antipasto bar will serve as focal point of the Salute, as it stands to fill the 4,000 square foot room. Among other classic Italian mainstays, the bar will feature braised meats, an array of fresh seafood, a selection of vegetarian choices and other Italian specialties. Other house specialties include Crispy Zucchini Flowers —  which consists of sweet ricotta, pistachio pesto, amoretti — and Ricotta Gnocchi "Sorrentina" — a mouthwatering marriage of san marzano tomatoes, aged parmesan, blistered tomatoes.

"I've worked in some incredible kitchens, but Salute will absolutely be the pinnacle of my cooking career, and I can't wait for our guests to fall in love with the food," Sautto said.

Salute will be the first venture for the newly-formed Clique Hospitality group, a boutique outfit from Andy Masi, the mastermind of some of Las Vegas' most influential restaurants, nightclubs and lounges. Salute will embody the hallmark of Clique — a group that will pride itself on offering upscale dining in a comfortable environment.
