New FIN Restaurant Headlines Tropicana Casino & Resort's Summer Season
Locally Grown Foods and Wines Featured at Atlantic City's New Oceanfront Restaurant
ATLANTIC CITY, N.J., May 13 /PRNewswire/ -- Just in time for the summer season, the Tropicana Casino & Resort announced today its new seafood restaurant, FIN, will open on May 28, 2010. The restaurant will feature locally grown food and wine from New Jersey fishermen, farmers and vintners. It will be the only seafood restaurant in Atlantic City with outdoor, oceanfront seating.

FIN's Chef Demetrios Haronis, who was born and bred on the Jersey Shore, will take the helm at the restaurant. Chef Demetrios, who is a graduate of the Academy of Culinary Arts, Mays Landing, NJ and has worked at numerous restaurants along the south Jersey Shore from Cape May to Longport, joined Tropicana in 1994 as a sous-chef. He has cooked his way up the ranks in nearly all the restaurants at the Tropicana to his new post as head chef of FIN, gaining invaluable experience and perspective about how a successful restaurant works in Atlantic City. His vision for FIN is to offer a high-end culinary experience using the freshest local products that are available each season. He will even go out to meet with local fishermen and farmers and personally inspect their wares before purchasing.
Items on the menu at FIN created by Chef Demetrios will change seasonally and range from contemporary to classic, with signature dishes such as "Chef D's" Dancing Shrimp, made with onion panko crusted shrimp served with a lobster crab cake; Crabsickles, jumbo lump crab on a crab leg; grilled tuna ribs; and homemade oyster cracker breadsticks. There will also be a sushi and raw bar. FIN will serve only the highest quality menu items in all of its dishes. Diners will enjoy fresh fish flown in from around the world. If it was fished yesterday, it will be on the menu today at 6 p.m.
Thoughtful attention has also been paid to FIN's wine and cocktail menus. The wine list will feature "50 under $50," showcasing local wines as well as a reserved list of premium selections. FIN's bar will offer a special Bloody Mary recipe and daily evening cocktail specials with hand-crafted simple syrups and mixers as well as a variety of fresh squeezed juice drinks.

All of FIN's seats will have an ocean view. The restaurant will also have outdoor, oceanfront patio seating, weather permitting. The restaurant's design is "sea chic," and a modern mermaid theme will be incorporated. FIN will be open Wednesday through Sunday from 6-11:00p.m.
FIN's decor makes the most of its ocean-front setting within a soothing and sophisticated palette, bringing the ocean indoors with creative use of glass tiles and accents, reminiscent of beach-washed sea glass. There will be a glass-enclosed Captain's Table, the first in the area, offering private dining for up to 10 people. Chef Demetrios and his team can create special items or Captain's Table guests can order off the menu.
