Meet JW Marriott New Orleans' New Chef Clint "Chuck" Subra

Chef Chuck brings nearly 20 years of cooking experience in New Orleans to the hotel on Canal Street, almost 10 of them being for multiple Marriott hotels. His training began under Master French Chef Rene Bajeux at Rene Bistrot that led him to La Cote Brasserie. Learning Bajeux's "cooking of the earth" philosophy, Chef Chuck was able to develop his passion for using local, fresh and seasonal ingredients and cooking techniques indigenous to the Gulf Coast. 

His tenure at La Cote Brasserie at the Renaissance Arts Hotel positions him well for JW Marriott New Orleans. His training, plus his long residence in southern Louisiana, allows him to create traditional New Orleans flavor infused with global influences. Signature dishes include Alligator Croquettes, Crystal and Steen's Sweet Heat, Mirliton Slaw and Pan Seared Red Fish, Sunset Sweet Potato and Creole Country Andouille Hash.
