New Recipes Featuring Lighthouse Selections

Creamy Garlic Shrimp and Zucchini Noodles
Serves 2
Ingredients
1 package SeaPak Lighthouse Selections Creamy Garlic Shrimp
3 medium zucchini
Coarse salt and freshly ground black pepper
1 lemon, cut into quarters
Directions
- Bring a medium pot of salted water to a boil.
- While water is heating, slice zucchini into "noodles" by first cutting the tops and ends off each zucchini. Then, cut them lengthwise into ¼-inch-thick planks. Finally, cut the planks into ¼-inch-wide strips to make the "noodles."
- Add noodles to the boiling water and cook until al dente (about 2-3 minutes). Drain in colander, lightly salt and pepper, and set aside.
- Place same pot back over medium-high heat and follow package directions for cooking the shrimp.
- TO SERVE: Divide zucchini noodles evenly in 2 bowls (give them a twirl to make them look pretty). Top each bowl with half of the shrimp and its sauce. Squeeze lemon juice over each.
