Easy Tuscan Shrimp Scampi
Prep Time: 5 minutes
Cook Time: 15 minutes
Servings: 4
1 package (12 ounces) SeaPak Shrimp Scampi
8 ounces linguine
1 cup halved grape tomatoes
5 cups fresh spinach
- Cook linguine according to package directions. Drain, reserving 1/4 cup of the pasta water.
- Meanwhile, cook shrimp scampi according to package directions. Stir in tomatoes, spinach and pasta and stir until spinach wilts slightly.
- Stir in pasta water, if necessary, to reach desired consistency.
- Divide pasta among 4 serving plates or bowls.
