Ecco Domani Prosecco is made with grapes from Treviso, in northern Italy's renowned Prosecco region. The fruit for this vintage was primarily selected from historic hillside vineyards. Well drained chalk and clay soils and mild, stable temperatures provide the perfect conditions for delicate grapes with elegant floral and fruit characteristics.
Made in the Charmat method, Ecco Domani Prosecco undergoes a brief secondary fermentation that creates a delightfully fizzy quality. The result is a wine with a pale, golden straw color that offers bright, vibrant aromas and flavors of fresh citrus, honey and green apple supported by subtle floral notes. Its creamy sweetness is balanced by crisp, refreshing acidity, a delicate mouthfeel and a smooth finish.
"This Prosecco pairs beautifully with casual meals including seafood and salads and also with delicious indigenous ingredients from the Treviso region," said Gatto. "One of my favorite dishes to serve alongside it is Risotto con Radicchio e Casatella, which is made with local chicory and a traditional creamy cheese from the Treviso area.
