EatLimmo Wins 2015 XCS Challenge
Mexico-Based Startup Crowned Grand Champion
MOUNTAIN VIEW, Calif., June 9, 2015 /PRNewswire/ -- Singularity University (SU) today announced that technology startup EatLimmo was named Grand Champion in the XCS Challenge at the Exponential Finance conference last week in NYC.

Mexico-based EatLimmo (http://www.eatlimmo.com/), was voted Grand Champion by the conference audience. EatLimmo beat two other companies, CaptureProof (https://captureproof.com/) and Student Loan Benefits http://goslb.com/) during the final round on Wednesday, June 3, at the two-day, sold-out event.
EatLimmo has developed a process that uses the most nutritious parts of fruits—peels and seeds-which are typically discarded. It transforms them into highly nutritional, functional, and inexpensive ingredients for the food- processing industry.

The panel of judges included Chance Barnett, CEO of Crowdfunder; Thomas Jankovich, Deloitte's Innovation Leader for the US Financial Services Practice; Vas Kodali, EVP & Head of Advanced Technology & Partnerships at Wells Fargo; Bart-Jan Schnekels, Head of IT Strategy at Credit Suisse, and Charles Schwarz, Managing Director, Group Design & Digital Office at Barclays.
