Dickey's Barbecue Pit Set to Open in Bellingham

BELLINGHAM, Wash., July 11, 2011 /PRNewswire/ -- Cheri Benson breaks away from Comcast to open her first Dickey's Barbecue Pit, the largest quick-serve barbecue chain in the country, in northern Washington.

"I was born and raised in Bellingham and have no interest in relocating. I did look into the hamburger places, the taco places and the sandwich places, but our town currently has plenty of these. We do not have a strong barbecue presence in the area," said Benson.  "I feel like Bellingham is ready for a barbecue chain and I am truly happy I get to be involved in bringing barbecue into this area."

Benson worked for Comcast for 25 years, but lost her job to companywide layoff, jumpstarting the decision to open a franchise with her grandson, Dustin Benson.

"In April I was laid off after 25 years and my franchise dream began with the idea and help of my grandson," said franchisee Benson.

Cheri is an avid traveler, who loves to fish off the islands in the Pacific Northwest, but can't wait to start cooking in her own Dickey's Barbecue Pit.

"During my first visit to Dickey's Barbecue Pit, I really enjoyed the friendly service, the great food and the sweet tea. I love all the sides Dickey's offers and of course the complimentary pickles and ice cream. The catering packages are also a great compliment to the restaurant business model," Benson said.

Texas-based Dickey's Barbecue Pit opened in 1941 and began franchising in 1994. Dickey's Barbecue Pit is well-known for their pit-smoked signature meats, complimentary ice cream and the big yellow cups.
