This project, set to get underway this year and be completed in early 2012, represents a complete makeover of the airport's current pre-security food service outlets.
Delaware North now operates at four airports in the United Kingdom. In 2009, the company entered the United Kingdom travel hospitality market by opening restaurants at London's Heathrow Airport, including the popular Dining Street Restaurant, as well as at Gatwick Airport in London and at Edinburgh Airport in Scotland.
"Delaware North Companies continues to focus on growing our innovative airport food service and retail business worldwide," said Matt King, president of Delaware North Companies Travel Hospitality Services.
In Australia and New Zealand, Delaware North operates at an additional nine airports. In all, the company operates at more than 30 airports worldwide in the United States, the United Kingdom, Australia and New Zealand.
A number of Delaware North's airport restaurants have received industry honors and been cited by various international news media and travel and culinary publications as some of the best.
In the United States, the Salt Lick Bar-B-Que at Austin-Bergstrom International Airport in Texas, Encounter Restaurant at Los Angeles International Airport and the Heineken Lounge at Newark International Airport are among the Delaware North operations that have garnered accolades.
In addition, Dining Street at Heathrow was the 2009 Moody Report Destination Food and Beverage Outlet of the Year. Delaware North was also named Retailer of the Year in 2009 by Qantas for redeveloping the food court at the Qantas Terminal at Melbourne Airport in Australia.
"With an in-depth knowledge of food and hospitality management and their attention to detail focus, they are sure to bring a fantastic range of catering offerings that should meet the requirements of both airport visitors and airport staff alike," said Francois Bourienne, Glasgow Airport's commercial director.
The Glasgow Airport plans call for a split-level operation: a 324-seat food court with three restaurant concepts on the first floor of the main terminal opposite departing flights, and a 78-seat restaurant on the ground floor for international arrivals.
The four new eateries are Central Sports Bar and Grill, The Deli Kitchen Cafe, and Fresh Food Central on the first floor and First Stop Cafe Bar on the ground floor:
Central Sports Bar and Grill
Central Sports Bar and Grill will have a strong sports theme throughout, with flat-screen televisions showing major live sporting events. The menu will feature an American theme, including home-made burgers, loaded potato skins and Buffalo wings.
The Deli Kitchen Cafe
The Deli Kitchen Cafe will offer a wide range of fresh sandwiches, Paninis, pastries and various sweet and savory snacks. The deli aims to prepare and serve fresh food, but quickly.
Fresh Food Central
Fresh Food Central will be an assisted buffet-style restaurant that encourages customers to sit back, relax and watch the food preparation process, as the large open view kitchen will provide a theater-like setting. The wide-ranging menu will include a traditional Scottish breakfast, salads, sandwiches, stone-baked pizza and a children's menu.
First Stop Cafe Bar
First Stop Cafe, which will be the first stop for many airport visitors, will feature a menu with a variety of sweet and savory snacks and a comprehensive range of beverages, including coffee and teas.
In total, the four outlets will provide a wide range of foods, including American, Scottish breakfast, salads, sandwiches, Paninis, pastries, baked goods, snacks, and stone-baked pizzas. Local ingredients and produce will be emphasized. Delaware North's locations will also serve various coffees and teas and an assortment of other beverages.
"We are delighted to be coming to Glasgow Airport," said Simon Dobson, managing director of Delaware North's United Kingdom operations. "We have worked closely with the local team at BAA Glasgow to create fresh, innovative concepts and service solutions."
