Cabot, the Vermont-based dairy cooperative best known as "Makers of The World's Best Cheddar," is partnering with Stop & Shop and Giant Food stores located throughout the Boston, Connecticut, NY metro and Baltimore/D.C./Virginia metro areas to promote healthier food choices as hundreds of thousands of consumers begin the season of Lent that is marked by the celebration of Mardi Gras on "Low" Fat Tuesday.
Customers who shop at Giant Food and Stop & Shop supermarkets can pick up Cabot's free Low Fat Tuesday recipe brochure that is packed full of fabulous Low Fat Tuesday recipes. With 17 recipes ranging from Harvest Stuffed Turkey Burgers with Cranberry Mayo to Spicy Hot Potato Soup to Spinach-Cheese Ravioli, there's a lower-fat option for even the most health-conscious individual.
How did the Cabot chefs do it? They trimmed calories and fat by choosing reduced, low and non-fat dairy foods such as Cabot's 50% and 75% Reduced Fat Cheddars, and 50% Reduced Fat Cheddar with Omega-3 DHA, and focused on ample but health conscious portions for each recipe.
Health experts continue to recommend reducing fat in our diets, and making the switch from a two-percent milk cheese to Cabot's 50% or 75% Cheddar (made with one-and-a-half percent and one-percent respectively) cuts fat even more without sacrificing taste.

Makes 4 Servings |
|
1 Italian turkey sausage, casing removed and crumbled (about 1/3-1/2 cup) |
|
1/2 cup frozen chopped spinach, thawed and squeezed dry |
|
1/3 cup fat-free ricotta cheese |
|
4 ounces Cabot 75% or 50% Reduced Fat Sharp Cheddar, grated & divided (about 1 cup) |
|
1/4 teaspoon salt |
|
1/4 teaspoon freshly ground black pepper |
|
1 small garlic clove, minced |
|
32 wonton wrappers |
|
2 cups marinara sauce |
|
1. Cook sausage in small skillet over medium heat for 3 to 5 minutes or until browned. Combine sausage, spinach, ricotta, 1/2 cup of cheddar, salt, pepper and garlic, mixing well. |

2. Working with 2 wonton wrappers at a time (cover remaining wrappers with damp towel to keep from drying out if needed), spoon about 1 tablespoon of spinach filling onto center of one wrapper. Moisten edges of both wrappers with water; place second wrapper over filling. Pinch 4 edges together or use back of fork to seal. Repeat with remaining wrappers and filling. |

3. Working in batches, gently lower wonton ravioli into lightly boiling water. Cook for 2 minutes or until tender; drain well. |

4. Warm marinara sauce in microwave until hot; spoon evenly over ravioli and top with remaining cheese. |
