SAN FRANCISCO, Nov. 29, 2018 /PRNewswire/ -- To celebrate the Pac-12 Football Championship on November 29, 76® joined forces with award-winning bay-area chef, Ravi Kapur to curate a tailgate-friendly menu for game day. Kapur hails from Eater's "Restaurant of the Year" Liholiho's Yatch Club based in San Francisco. Chef Kapur has continued to gain notoriety in the area since being named best new chef by Food & Wine in 2016.
Kapur details two of his favorite recipes from the exclusive menu below, Free Bird with Caviar Ranch and Sea Biscuits with Miso Honey Mustard. Pac-12 fans and all football fans alike can enjoy these chef-created tailgate recipes from the comfort of their home during the Pac-12 championship game and throughout football season.
Free Bird with Caviar Ranch
4 chicken thighs, boneless, skin on
1 tsp granulated garlic
1 tsp granulated onion
2 T salt
¼ cup coconut milk
1 tsp turmeric fresh micro planed
2 T cilantro minced
1 tsp ginger fresh minced fine
Marinate chicken thighs in above ingredients, let sit for 1 hour.
2 cups flour
2 cups corn starch
Toss chicken in flour mixture and deep fry at 350 degrees in rice bran oil for about 6-8 minutes until done. Serve with Caviar Ranch sauce.
Caviar Ranch
1 cup homemade aioli or mayonnaise
1 cup sour cream
2 T lemon juice
¼ cup buttermilk
¼ cup white balsamic vinegar
1 t garlic microplane
2 T dijon
2 T chives finely mince
2 T tarragon finely mince
2 T shiso micro dice
2 oz caviar
Mix all ingredients together except for caviar until smooth. Fold in caviar.
Sea Biscuits with Miso Honey Mustard
4 ¼ cups flour
4 ½ T baking soda
4 tsp sugar
1 tsp salt
1 stick of butter cold diced small
3 ¾ cups buttermilk
½ cup furikake
Sift flour, baking powder, sugar, salt
Cut in cold butter into flour mixture til crumbly
Gently mix in buttermilk and furikake
Scoop onto greased cookie sheet and bake at 400 degrees for about 20 minutes
Miso Honey Butter Recipe
1 cup honey
½ cup miso
2 sticks of butter, softened
Mix ingredients together in bowl with whisk until smooth.
