ABP Revamps Salad Menu to Feature Premium Salads with Two-Thirds More Protein
Cafe Introduces Permanent Change with More Fresh Vegetables and No. Antibiotics. Ever. Turkey and Chicken
BOSTON, May 27, 2015 /PRNewswire/ -- Au Bon Pain, the leader in fast casual dining, is debuting a completely revamped salad line. Starting today, the cafe will serve larger salads made with even more fresh vegetables and protein. Additionally, No. Antibiotics. Ever. chicken and turkey will now be used in all Au Bon Pain sandwiches, wraps and salads. Au Bon Pain continues to prioritize providing balanced menu options using the freshest ingredients to guests seeking healthy choices.
"Our new salad options bring a higher quality of healthful choices to our cafes," said Katherine See, Au Bon Pain executive chef. "We listened to our guests---they were asking for more variety and bigger flavors, so we decided it was time to create an overhaul of every salad. We made them bigger, with tasty flavors like ginger teriyaki and new dressings like avocado Greek yogurt dressing, really paying attention to specialty ingredients."
Multiple specialty salads will fill the menu and will include a Harvest Turkey salad made with antibiotic-free turkey, cranberries, grapes, goat cheese and maple walnut vinaigrette, and an Asian Chicken and Noodle Salad with ginger teriyaki chicken, udon noodles and edamame, among others. Today's new salad menu is one of many long-term menu changes that Au Bon Pain will be introducing over the next few months under Executive Chef Katherine See.

New salads available include:
Harvest Turkey—Roast turkey with romaine and spinach, cranberries, grapes, Granny Smith apples, goat cheese, walnuts and maple walnut vinaigrette
Asian Chicken and Noodle Salad—Ginger teriyaki chicken with romaine and field greens, udon noodles, edamame, carrots, cucumbers, scallions, sesame seeds, sliced almonds and sesame ginger dressing
Chicken Cobb Avocado—Sliced chicken with romaine and field greens, Applewood-smoked bacon, gorgonzola, egg, tomatoes, cucumbers and avocado Greek yogurt dressing
Farm Stand Steak Salad—Sirloin steak drizzled with balsamic glaze, romaine and field greens, grilled asparagus, tomatoes, cucumbers, caramelized onions, gorgonzola and red wine peppercorn vinaigrette
Vegetarian Deluxe—Romaine and field greens, fire-roasted peppers, Kalamata olives, feta, tomatoes, cucumbers, carrots, chickpeas, red onions and balsamic vinaigrette
Southwest Chicken—Marinated chicken, romaine, black beans, roasted corn, fresh avocado, cucumbers, tomatoes, crispy wontons and Southwest vinaigrette
Chicken Caesar—Sliced chicken with romaine, house-made croutons, Asiago cheese and Caesar dressing
Steak Caesar—Chicken Caesar Asiago salad with steak substituted for chicken
Side Garden Salad—Fresh vegetables atop a bed of Au Bon Pain lettuce blend
