Frustrated by the status quo of the traditional and macho ranch industry, the former showjumper and political science grad launched Hippie Cow Beef home delivery service this year in an effort to do better for the environment and the consumer.
While studying to become an attorney in Dallas, Nikki noted a growing engagement with sustainable food sourcing among her generation; yet she saw little progress in ranching practices when it came to the production of America's most popular meat. "Almost all the beef sold in America is raised in a feedlot," she says. "I visited my partner Parker [Flannery] on a cattle ranch in Australia and noticed the cows there lived freely on pastures. Australia is one of the biggest beef producers in the world, so I felt there was a serious lapse in ways things are done here." Her "Hippie Cows" are never confined to a feedlot, which can negatively impact the animal and the environment. Instead, each cow will spend its entire adult life roaming thousands of acres along the banks of the Red River.
Hippie Cow's pasture-focused process is a radical departure from current practices, especially under the direction of a young woman. As a newcomer attempting to revolutionize the historically masculine world of ranching, Nikki has fought an uphill battle to establish her vision. "Other ranchers wouldn't trust me to open a gate during the first six months of setting up the business," she says. "I always think of that quote: 'Work hard in silence and let success speak for itself.' That's very much my mentality now." Alongside Parker, Carr believes she can engage with an eco-conscious audience of foodies who share her desire to enjoy premium-quality beef that supports a healthy environment. And the philosophy doesn't end there; a portion of the proceeds from the sale of every box will benefit Heroes and Horses, a veterans charity that hosts expedition-style horse packing trips for combat vets suffering from PTSD.
