Mother's Day is Easy with a Lot of Love and Best-selling Dips

The entertaining experts at Santa Barbara Bay, makers of best-selling refrigerated deli dips available nationwide, suggest these easy, family-friendly recipes, made using store-bought ingredients. Families can prepare the simple dishes together and give mom a sneak peak to a summer filled with lazy patio dinners. Featuring Santa Barbara Bay's new line of All Natural Greek Yogurt Dips, these recipes are also something kids – and their moms – can feel good about serving the entire family.
Thai Chicken (Serves 4)
Ingredients:
- 4 boneless skinless chicken breasts
- 12 ounce Santa Barbara Bay® All Natural Greek Yogurt Dip, Thai Three Pepper
- 1 cup Panko bread crumbs
- 1/2 cup peanut oil
- 1 cup snow pea pods
- 1 red pepper, cut into thin strips
Directions: Place the chicken and the yogurt in a large ziplock bag and allow the mixture to marinade for 24 hours under refrigeration. In a large frying pan, heat the peanut oil to medium high. Get kids to dredge the marinated chicken breasts in the breadcrumbs until completely coated and carefully place each in the pan. (Make sure they clean their hands thoroughly.) Sautee for 5 minutes on each side. Remove chicken from pan and add vegetables, sauteing for 2 to 3 minutes. Allow kids to equally divide the cooked vegetables between 4 plates and top with chicken breast in a fun, colorful arrangement.
Linguini with Roasted Red Peppers (Serves 6)
Ingredients:
- 1 pound linguini, cooked according to directions and drained
- 12 ounces Santa Barbara Bay® All Natural Dip, Roasted Red Pepper and Asiago Cheese
- 2 cups spinach leaves, chiffonade
- 2 Roma tomatoes, diced
- 1 yellow pepper, cut into thin strips
- 1/2 cup grated Asiago Cheese, plus additional cheese for garnish
Directions: Cook and drain linguine. Return to pot over medium heat and allow kids to hand Dad the dip, spinach, tomatoes, peppers and cheese to add to the noodles. Cook until heated through. Hold pot while kids carefully divide between 6 plates and allow them to sprinkle additional cheese over the top. Add your favorite bread and it is a meal!
