A blood orange sorbet will cleanse palates, before they savor entrees like beef Wellington, black trumpet foie gras duxelle, braising greens, diced baby carrots and beets, Yukon whipped potatoes with sherry truffle jus and crock pot steamed red snapper, sauteed prawns, cockles, enoki mushrooms, baby fennel, snow peas, red "bird's eye" peppers, sage leaves and Asian mushroom fish fumet.
