"Thanks to its versatility, pork has a starring role in any of these tasty holiday trends. With savory bacon and juicy roast pork, it's easy to be inspired by new recipes and introduce new flavors to the holiday table."
In addition to the revival of retro foods, the following emerging trends are expected to grace holiday tables across the country:
- Benefits of Brunch – There's no better cure for the inevitable end-of-year stresses than a casual but generous midday feast with friends and family. Hearty dishes like Pork Roast Strata with Green Chiles and Goat Cheese allow the host to cut down on the kitchen workload and repurpose last night's leftovers.

The "Holiday Food Trends" survey was conducted by Wakefield Research (www.wakefieldresearch.com) among 1,000 Americans ages 18 and older between August 17th and August 22nd, 2011, using a random-dialing telephone omnibus survey.
