Ingredients:

1 tbls toasted sesame oil
2 tbls reduced-sodium soy sauce
1 tbls balsamic vinegar
1 red pepper, sliced
1 can mini corn on the cob
2 cups spinach
1 red onion, sliced
1 tsp red pepper flakes
2 tbls sesame seeds
Preparation Method: Cut tofu into triangles. Heat 1 tablespoon sesame oil in non-stick skillet. Cook tofu 4 minutes on both sides. Add remaining ingredients. Cook until veggies are tender.
