Del Real Foods Teams Up With Local Chef Esdras Ochoa to Create Delicious and Easy Recipes for Summer Entertaining

This summer, Del Real Foods partnered with Chef Esdras Ochoa, co-owner of award-winning Mexicali Taco & Co. in downtown Los Angeles, to develop a few simple appetizers perfect for a BBQ or pool party.
"I was introduced to Del Real Foods last year during a local chef's recipe challenge," Ochoa said. "I won the company's Fight for Flavor competition where I had to create a fusion dish with one of their products. I found working with their quality ingredients made it easy because the taste is so great."
Three recipes that will turn your summertime party into a resounding success include: Chicken Tinga Bites, Carnitas Sliders, and Grilled Chicken Nachos. You can find all three on the Del Real Foods website. Here's a recipe for the Pork Carnitas Sliders:
Pork Carnitas Sliders
Makes 10 sliders
1 cup BBQ Sauce
16 oz. Carnitas
3 Tbsp. Apple Cider Vinegar
10 each Slider Buns
Unsalted Butter
1 ¼ cup Cole Slaw Cabbage Blend
1/3 cup Remoulade (see recipe)
In a small saucepan, heat BBQ sauce over medium heat. Add carnitas and vinegar. Stir until heated throughout and sauce is incorporated into the meat. Add more BBQ sauce if needed. Set aside and keep warm.
Spread a thin layer of butter on the inside of each slider bun. Place on a skillet heated over medium heat. Heat bun until golden brown.
In a mixing bowl, combine the Cole Slaw mix and the remoulade. Place about ½ ounce Slaw on bottom of each slider. Top with 1 ½ ounces BBQ Pork. Top with slider bun. Serve immediately.
Remoulade
Yields 1 ¾ cup
¼ cup Fresh Lemon Juice
½ cup Chopped White Onion
½ cup Sliced Green Onion
¼ cup Chopped Celery
2 tablespoons Chopped Garlic
3 tablespoons Whole Grain Mustard
3 tablespoons Ketchup
3 tablespoons Chopped Fresh Parsley
1 teaspoon Salt
Pinch of Cayenne Pepper
Black Pepper to taste
½ cup Canola Oil or Light Olive Oil
Place all ingredients except for the oil in a food processor. Blend. Slowly add oil as mixture is blending. Remove from processor and set aside.
