During the special event, students were given multiple opportunities to experience the power of Olives from Spain. Following speeches by both the school's founder Francois Dionot and lead instructor Chef Patrice Olivon, the first year students asked questions and engaged as McCloud explained how he developed his recipes and the thought process behind working with new ingredients. Describing the recipes during the step-by-step demonstration, McCloud described his Smoked Trout and Spanish Gordal Olives dish as well as Lamb Loin Roulade Stuffed with Spanish Manzanilla Olives and Crusted in Spanish Manzanilla Olive Powder, explaining how each component of the dishes was brought from its original state to become the final dish.
With each recipe showcased, the L'academie de Cuisine students asked questions about the process of working with Olives from Spain and the origins of the product.
Chef McCloud demonstrated the incredible versatility of Spanish Olives and how they can make any dish more robust and memorable by explaining to students how, by using Spanish Black olives and the trial and error process, created a dessert that comes with thinking outside the box. Elegant and powerful, Olives from Spain will now surely be added to the repertoire of these future culinary masters.
