Crops for the three brands are harvested at the peak of ripeness and then packaged within hours at McCall Farms' Effingham, S.C., facility to provide fresh, convenient, healthy staples for your pantry. Try these simple recipes for a tasty treat at your next tailgate gathering.
Spicy Southern Potato Salad
Ingredients:
1 (7 oz.) jar Dunbars sliced roasted peppers
1 (14 ½ oz.) can of Margaret Holmes Tomatoes, Okra and Corn
3 lbs. red skin potatoes
, cubed
¼ tsp. fresh ground pepper
½ tsp. salt
1 Tbsp. Texas Pete® hot sauce
12 slices crisp bacon, crumbled
½ cup mayo
½ cup sour cream
Instructions:
In a large pot, drain liquid from roasted peppers and tomatoes. Add potatoes (cubed to 1 inch). Cover with water; gently boil 15 minutes or until tender. In a large bowl, mix mayo, sour cream and Texas Pete®. Add drained roasted peppers (slightly chopped), tomatoes with okra and corn, cooked potatoes, salt and pepper, and 8 of the crumbled slices of bacon. Toss together gently. Top with remaining crumbled bacon. Can be served warm, but for best flavor, refrigerate 3 hours or overnight.
Southern Caviar Dip
Ingredients:
1 can (15 oz.) Glory Foods® Seasoned or Sensibly Seasoned™ Blackeye Peas, drained
¼ cup red bell pepper, diced ¼"
¼ cup green onions, sliced ⅛"
1 tsp. pickled jalapeno peppers, minced
1 tsp. garlic, minced
¼ tsp. cumin, ground
¼ tsp. black pepper, ground
1 tsp. lime juice
1 Tbsp. cilantro leaves, minced
Instructions:
Combine drained Glory Foods® Seasoned or Sensibly Seasoned Blackeye Peas with all of the other ingredients in a bowl or small casserole dish and mix. Cover and refrigerate for 2 to 4 hours to allow the best flavor to develop. Serve with your favorite chips, fresh vegetables or crackers.
Butter Beans and Sun Dried Tomato Hummus
Ingredients:
2 (15 oz.) cans Glory Foods® Seasoned Butter Beans, drained well
4 Tbsp. lemon juice
1 (8 oz.) jar sun-dried tomatoes packed in oil, drained and finely chopped
2 tsp. Italian seasoning
Instructions:
Combine all ingredients in food processor and process until smooth and creamy.
Serve with crackers or pita bread.
