In Kannada, 'Oota aita?' (Have you eaten?) is more than a customary greeting - it's an ice breaker between strangers, a query of genuine concern and symbolic of the warm hospitable nature of the people of Karnataka.
This bean-shaped land is host to several communities, each with its own distinct culture and cuisine. Oota, a Karnataka-themed restaurant, journeys through this vast array of food and is a tribute to this culinary diversity. Curating little known as well as popular dishes from various circuits - South Karnataka, the Canara coast, the Western Ghats, the Deccan tract of North Karnataka and the borderlands of the Hyderabad-Karnataka region - Total Environment presents Karnataka on a platter.
Over 350 dishes were cooked, while visiting legendary restaurants, hole-in-the-wall eateries, temple kitchens, roadside shacks and homes of people from nearly 25 communities - Kodavas, Bunts, Gowdas, Lingayats, Bearys, Mangalore Catholic, Saraswat Brahmins, GSBs, Siddis, Reddys, Sauji, Konkanis, Navayaths, Jains and Halakki to name a few.
Across 2 years and various seasons, diverse regions were covered - from Coorg to Malnad, Western Ghats, Mangalore, Uttar Kannada, North Canara Coast, Hyderabad-Karnataka region, North Karnataka, Mysore, Bangalore and South Karnataka- to design a menu consisting of Karnataka's culinary wonders.
So, guests can sit back and sample the rotational menu as the team takes them on a gastronomical adventure through Karnataka. From soups, coolers and tambullis to chutneys, pudis and pajjis, from salads and starters to rice, ragi, jowar, godi and desserts to everything in between.
