Cutting-Edge Moto Restaurant is pleased to announce European trained and Moto veteran Chef Chris Anderson as Executive Chef and bids farewell to Chef Richard Farina
CHICAGO, April 6, 2015 /PRNewswire/ -- Southern cooking was a way of life for Moto veteran Chris Anderson. As a young boy in the small town of Washington, North Carolina, Chris learned how to make country ham with fried okra and red-eye gravy from his grandfather, Robert. By the age of 16, he was working in professional kitchens, and went on to study at the International Culinary Academy in Charlotte. While in school, he was awarded a silver medal at the ACF Junior Hot Foods Competition. His curiosity led him to Europe after graduation, where he studied and worked in legendary food city, Lyon, France for one year.
While working at the 2 Michelin-Starred Auberge de L'Ile, Chris honed his classic French techniques in addition to progressive French cuisine from mentor, Chef Jean-Christophe Ansanay-Alex. Jean-Christophe taught him, "You always need to listen to a person, to the food, to moments and emotion."
After a year in France, Chris wanted to continue to push the limits of his culinary craft by working for some of the most innovative chefs in the US. Focusing on the very best quality products with an emphasis on innovative cuisine, he worked for the next 3 years at Alinea, L2O, and a stint at Le Bernardin in New York before finally calling Moto his home.

Chef Anderson will focus on purity of product while paying respect and homage to French cooking and his southern roots.
